Leave the shrimp in the shell, remove heads, wash, and drain. In a bowl, combine the scallions, ginger, garlic, soy sauce, hoisin sauce, Tabasco sauce, and sherry. Divide the mixture between 2 sauce dishes and set aside. Put the shrimp in a heatproof dish and put the dish in a steamer. Steam for 10 minutes.
